Summer Salsa

Published on June 2nd, 2009 by Alix

Summer Salsa Cook Time: 40 mins

Ingredients:

  • 5 Large Tomatoes, Diced
  • 2 Tamatillos, Diced
  • 1 Chile, Minced
  • 4 Scallions, Chopped
  • 3-4 Tbsp Cilantro, Finely Chopped
  • 4 Cloves of Garlic, Minced
  • Squeeze of Lime

Directions:

  1. When selecting the five tomatoes, choose ones with varying ripeness to change the texture and flavor of each tomato. To vary texture more, chop each tomato in different size pieces. Here we seeded a few of the tomatoes so that some were softer and juicier than others.
  2. Add each ingredient respectively into a medium serving bowl, stirring after each addition. Once finished, cover with plastic wrap and place in the refrigerator for half an hour. The longer it is able to sit the more the flavors will meld. Serve with tortilla chips.
