Guilt Free Chocolate Mousse

Ingredients:
- 3 Cups Ricotta Cheese
- 1/4 Cup Splenda (If you don’t like Splenda, try Stevia available at your local health food store!)
- 1/4 Cup Unsweetened Cocoa Powder
- 1 Tbsp Sugar Free or Low Sugar Chocolate Syrup (optional)
- Splash of Vanilla Extract
Directions:
- Put the ricotta cheese in a bowl and soften by mashing lightly with a spoon.
- Add the Splenda and unsweetened cocoa powder in small amounts mixing as you go.
- Add the chocolate syrup and vanilla to taste. Though the syrup is optional it adds richness.
- Serve on a plate with syrup drizzled over top. Makes 3-4 servings.
