Spinach Artichoke Baguette Pizza

Spinach Artichoke Baguette Pizza Cook Time: 25-30 mins

Ingredients:

  • 2 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 1/2 Onion, Chopped
  • 1 Tbsp Garlic, Minced
  • A Healthy Pinch of both Salt and Pepper
  • 2 Tbsp Flour
  • 1/2 Cup Milk
  • 1/2 tsp Cinnamon or Nutmeg
  • 3 oz Fresh Baby Spinach
  • 4-5 Jarred Artichoke Hearts, Rinsed and Chopped
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 Cup Cheddar Cheese, Shredded
  • Half of a Baguette, Cut in Half Lengthwise

Directions:

  1. Preheat the oven to 400 degrees.
  2. In a medium sized frying pan melt the butter and olive oil over medium-low heat.
  3. Add the onion and garlic and cook until soft. Add  Salt and Pepper.
  4. Whisk in flour. Then whisk in the milk and cinnamon or nutmeg. Cook until thick, or about 3-5 minutes.
  5. Put spinach into the pan and stir constantly until the spinach wilts. Add artichokes. Stir in Parmesan cheese.
  6. Remove from heat. Spread onto each piece of Baguette evenly and top with shredded cheese. Bake 6-8 minutes or until the cheese is melted. Makes 3-4 servings depending on the size of the baguette pieces. The mixture can be refrigerated in an airtight container for up to 5 days but should be heated again before spreading onto the baguette.
