Spinach Artichoke Baguette Pizza

Ingredients:
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
- 1/2 Onion, Chopped
- 1 Tbsp Garlic, Minced
- A Healthy Pinch of both Salt and Pepper
- 2 Tbsp Flour
- 1/2 Cup Milk
- 1/2 tsp Cinnamon or Nutmeg
- 3 oz Fresh Baby Spinach
- 4-5 Jarred Artichoke Hearts, Rinsed and Chopped
- 1/2 Cup Grated Parmesan Cheese
- 1/2 Cup Cheddar Cheese, Shredded
- Half of a Baguette, Cut in Half Lengthwise
Directions:
- Preheat the oven to 400 degrees.
- In a medium sized frying pan melt the butter and olive oil over medium-low heat.
- Add the onion and garlic and cook until soft. Add  Salt and Pepper.
- Whisk in flour. Then whisk in the milk and cinnamon or nutmeg. Cook until thick, or about 3-5 minutes.
- Put spinach into the pan and stir constantly until the spinach wilts. Add artichokes. Stir in Parmesan cheese.
- Remove from heat. Spread onto each piece of Baguette evenly and top with shredded cheese. Bake 6-8 minutes or until the cheese is melted. Makes 3-4 servings depending on the size of the baguette pieces. The mixture can be refrigerated in an airtight container for up to 5 days but should be heated again before spreading onto the baguette.
