Tilapia Curry Stirfry

Tilapia Curry Stirfry Cook Time: 15-20

For a Pescetarian diet

Ingredients:

  • 2 Small Tilapia fillets, 1” Cubes
  • 1 Large Green Pepper, 1” Cubes
  • 1 Medium Onion, Chopped
  • 1 Small Plum Tomato, Chopped
  • 1 Clove Garlic, Chopped
  • 2 Tbsp Extra virgin olive oil
  • Generous Coating of Curry
  • Salt & Pepper to Taste
  • Dash of Turmeric
  • 1 Tbsp of Parsley

Directions:

  1. In a medium size skillet on medium-high, heat the olive oil and add the peppers and onions. Generously add curry. Add turmeric and salt & pepper to taste
  2. Cook for 5-8 minutes over medium-high heat to soften the peppers and onions.
  3. Add the garlic, tomato and 1 tablespoon parsley. Cook for another 2-3 minutes.
  4. Add the Tilapia and a little more curry. (Do not stir excessively as the fish will fall into shreds if it is agitated too much)
  5. Continue to cook until the fish is cooked through (5-8 minutes).
  6. Serve over saffron rice or standing alone. Serves 2. Enjoy!

    thanks for that man! awesome idea and thoroughly interesting read. ive been trying to convince my boys that we should have a guys curry night in instead of going out every week, and actually did it last week. superb success it was, i can tell you! i found a tasty chicken and vegetable and a few others from this curry recipes site, and even makde the naan myself too. who said guys cant cook!
