Simple Lentil Soup

Ingredients:
- 2 cups Green Lentils
- Olive Oil
- 1 Large Onion
- 2 Tbls Garlic
- 1 Box Vegetable Stock
- 28 oz Diced Tomatoes
- 1 Bundle Kale (or 8 stalks)
- Salt
- Cumin
- Chili powder
Directions:
- Bring approximately 6 cups of water to a boil and add lentils. Cook until soft. Drain and leave to the side.
- Heat enough olive oil to cover the bottom of a large soup pot over medium heat.
- Add the onion and garlic and cook until slightly translucent.
- Add vegetable stock, tomatoes, and lentils. Bring back up to a boil.
- Add kale and salt, cumin, and chili powder to taste. We used approximately a teaspoon of each.
- Simmer for 15 minutes and serve hot.
