Simple Lentil Soup

Simple Lentil Soup Cook Time: 50 -60 mins

Ingredients:

  • 2 cups Green Lentils
  • Olive Oil
  • 1 Large Onion
  • 2 Tbls Garlic
  • 1 Box Vegetable Stock
  • 28 oz Diced Tomatoes
  • 1 Bundle Kale (or 8 stalks)
  • Salt
  • Cumin
  • Chili powder

Directions:

  1. Bring approximately 6 cups of water to a boil and add lentils. Cook until soft. Drain and leave to the side.
  2. Heat enough olive oil to cover the bottom of a large soup pot over medium heat.
  3. Add the onion and garlic and cook until slightly translucent.
  4. Add vegetable stock, tomatoes, and lentils. Bring back up to a boil.
  5. Add kale and salt, cumin, and chili powder to taste. We used approximately a teaspoon of each.
  6. Simmer for 15 minutes and serve hot.
