Mediterranean Cauliflower Bake

Ingredients:
- 1 Head of Cauliflower, Cut into Small Flowers
- 1/2 Cup Extra Virgin Olive Oil
- 3/4 lb Whole Wheat Ziti Pasta
- 7 oz Fire Roasted Peppers
- 14.5 oz Can Diced Tomato, Drained
- 8 oz Feta Cheese
- 2 Cups Kalamata Olives, Drained, Pitted and Chopped
- 3/4 Cup Flat Leaf Parsley, Chopped
- 1/2 Cup Breadcrumbs
Directions:
- Preheat the oven to 425. In a rimmed backing sheet, toss the cauliflower with a 1/4 cup of olive oil and season with salt and pepper
- Roast in oven, stirring, 1/2 way through until browned, about 20-25 minutes. Remove from the oven and lower the temperature to 350.
- In a large pot, cook the pasta, drain, and reserve 1/2 cup of cooking water. Return the pasta and 1/2 cup of water back to the pot and stir in the tomatoes, peppers, feta, olives, remaining olive oil, and half of the parsley and breadcrumbs.
- Pour the mixture into a 2 qt baking dish and top with the roasted cauliflower and remaining breadcrumbs.
- Bake until heated through, about 10 minutes. Sprinkle with the remaining parsley and serve hot. Serves 6-8.
