Lemon Orzo

Lemon Orzo Cook Time: 10-15 mins

Ingredients:

  • 1 Cup Uncooked Orzo
  • 2 Tbsp Olive Oil
  • Zest of 2 Small Lemons
  • Juice of 1/2 Lemon
  • 1/4 Cup Fresh Parsley, Finely Chopped
  • 2 Tbsp Grated Parmesan
  • Coarse Salt and Pepper to Taste

Directions:

  1. Cook orzo according to box directions. Drain, do not rinse.  Place directly into serving bowl.
  2. Combine the remaining ingredients with the orzo and stir to combine. Serve hot.
