Banana Nut Muffins

Banana Nut Muffins Cook Time: 30-35 mins

Ingredients:

  • 3 – 4 Bananas (Ripe and Browning- Thanks Tyler)
  • 1/3 Cups Butter
  • 3/4 Sugar
  • 1 Egg
  • 1 tsp Vanilla
  • 1 tsp Baking soda
  • Pinch of salt
  • 1 1/2 Cup of Flour (Whole Wheat)
  • 1Tbsp Strong Coffee (optional)
  • 1 Cup Chopped Walnuts (optional)

Directions:

  1. No mixer needed- Preheat the oven to 350
  2. Mix butter into the mashed bananas in a large mixing bowl
  3. Mix in the sugar, egg, espresso (optional) and vanilla
  4. Add baking soda and salt
  5. Add the flour and only mix until incorporated, not smooth.
  6. Fold in walnuts
  7. Pour mixture into a prepared muffin cups
  8. Bake for 25 -30 minutes or until an inserted fork comes out clean

    You might want to mention that really ripe bananas work best here. I’ll have to give these a try.
